Two boxes of Jiffy Blueberry Muffin Mix
Two eggs
One lemon
Fresh blueberries
1/4 cup milk
Before mixing the ingredients, preheat your over at 400 degrees.
In a medium bowl pour the Two boxes Jiffy Blueberry Muffin Mix into bowl, add the two eggs, 1/4 cup milk and lemon zest. Mix. Then add the fresh blueberries and mix them into the batter using a spoon. You want to keep the blueberries whole.
If you don't have muffin baking pans you can purchase cheap tin muffin pans at a dollar store. Two pans cost me a dollar. I spray the pan with none stick corn oil then flour. I do this so when the muffins are done baking, I let cool then pop them right out. No need to spend money on expensive muffin pans especially if you don't bake often or regularly.
Two boxes of Jiffy Blueberry Muffin Mix on sale cost two for a $1.00. Six large eggs on sale cost me $0.69. Four lemons on sale cost me four for a $1.00. Milk I usually have on hand. The none stick corn oil and flour have a long shelf life. Two boxes of Jiffy Blueberry Muffin Mix makes me eighteen small to medium muffins.
Again, this recipe is great for a beginner, for someone who does not bake a lot AND it's a very affordable recipe to follow in addition to being easy and fast.
